When frying avocado fries, you do not need to use a lot of oil. It is important not to overcrowd the frying pan, so it is best to fry these goodies in batches. If there are any dark crumbs remaining in the frying pan after you have fried your first batch, simply wipe the crumbs away with a paper towel and continue the frying process.

INGREDIENTS

  • 2 sliced firm avocados
  • 2 eggs
  • ½ cup all-purpose flour
  • 1 teaspoon smoked paprika
  • 1 cup bread crumbs
  • oil for frying
  • ¼ cup sesame seeds
  • 1 lime cut in quarters

METHOD

  • Whisk the eggs, add the flour and paprika, mix well into a soft batter.
  • Place a skillet on medium heat with a little oil.
  • Dip the avocado slices in the batter, then the bread crumbs.
  • Pan-fry in hot oil and turn when golden brown. Set aside.
  • Sprinkle with  sesame seeds and a drizzle of lime.
